Raspberry cupcakes with praline and white chocolate

A colourful desert that should be eaten with a sweet Bordeaux blanc such as Château Mazetier, an oscar of 2015 of its appellation.

  • 2 eggs – 120 gr of yogurt
  • 1 tbl spoon of creme fraiche
  • 1 tbl spoon of stevia sugar
  • 50 gr of flour / 60 gr of starch
  • 1 sachet of baking powder
  • 250 gr of raspberries – 100 gr of mascarpone
  • 10 cl of single cream– 100 gr of white chocolate
  • 50 gr of praline


  1. Make sure you have silicone cupcake moulds for this recipe. Pre-heat your oven at 180°C.
  2. In a large mixing bowl, add the yogurt, crème fraiche and mix. Add the eggs one by one followed by the sugar. Next add the baking powder and starch little by little and you will start to get a cake mix. Add the raspberries at the last minute and stir gently.
  3. Fill your cupcake cases and put in the oven to cook for 15 minutes. Once cooked, leave to cool.
  4. To make the topping for the cupcakes: On a medium heat, melt the white chocolate in a saucepan and add the single cream. In a bowl whisk the mascarpone with one table spoon of yogurt and add the melted chocolate. Put this mixture in a pastry bag in a cool place
  5. Decorate the cupcakes once they are cool with the ganache and sprinkle praline on the top with a raspberry for the final touch.
