Pig trotter tartines with cornichons

This is a traditional South west starter with spicy and fruity aromas that goes perfectly with Château la Freynelle’s Bordeaux Rosé.

Ingredients

  • 1 pigtrotter
  • 1 tbl spoon of good mustard
  • 10 cornichons
  • 1 loaf of bread (sliced)
  • 1 garlic clove

Preparation

  1. Toast the slices of bread and smother with garlic
  2. Cut the trotter into tiny pieces and fry them in a pan adding mustard and chopped cornichons.
  3. Place the slices of toast on a plate and if you wish to toast them earlier you may put them in the oven for about 5 minutes.
  4. This starter is served with a sprinkle of parsley. And if you wish, the cornichons can be replaced with capers.
