Guacamole revisited

This is great with a refreshing Bordeaux rosé such as the Canon cote de Montpezat « le petit canon » that goes very well with our Guacamole.

Ingredients

  • a few batavia leaves
  • 3 ripe avocados
  • 3 tomatoes
  • 1 red onion
  • olive oil and mustard
  • the zest of 3 limes
  • 1 red chilli
  • 1 garlic clove
  • chopped coriander
  • 1 tbl spoon of crème fraiche

Preparation

  • Prepare the veg : Cut the onion into two and chop finely, plunge into cold water for about 10 minutes and drain. Chop the 3 tomatoes into dice and grate the 3 limes. Seed and chop the chili and coriander and crush the garlic.
  • In a large bowl, make vinaigrette with olive oil, the juice of a lime, mustard and season. Add to the vinaigrette, the lime zest, chili and garlic, and then add the tomatoes, salad, coriander and onion.
  • How to prepare your avocados: Peel, take out the stone using a spoon. One half of the avocado will be used for decoration. The other half should be mashed using a potato masher, then add the lime juice, a table spoon of crème fraîche and a few pieces of tomato. Then season.
  • Using salad leaves, make a bed for your delicious guacamole, then you may use slices of avocado from the other half. Serve quickly.
