Pink red fruit tiramisu

This excellent colourful desert goes very well with a Bordeaux clairet, especially a bottle from Château Turcaud.

Ingredients

  • 250 gr of strawberries and raspberries
  • 3 eggs
  • 1 tub of mascarpone
  • 20 gr of sugar
  • 1 spoon of sugar
  • 1 tblspoon of orange blossom
  • 1 sachet of vanilla sugar
  • the juice of 1 lemon and ½ a grapefruit
  • 12 ladyfinger biscuits

Preparation

Stand for 3 hours

  1. In a bowl, whisk egg yolks with 20 gr of sugar and vanilla sugar until the mixture turns white. Add the mascarpone , honey, orange blossom and a table spoon of lemon juice. Whisk until peaks then fold in delicately.
  2. Prepare the strawberries by washing and cutting them into 2 or 4. .
  3. In a bowl, mix the juices from the lemon and grapefruit with 2 table spoons of hot water and dip the biscuits in.
  4. For this recipe , we use verrines. Layer the biscuits with one layer of cream then biscuit, and repeat. Once you have done this, you can place your tiramisu in the refrigerator for three hours.
  5. Leave a few strawberries to decorate the top. You may even crush a few biscuits and sprinkle them on your desert.
